Vải rửa sạch, bỏ vỏ, khéo léo bỏ hạt bên trong mà không làm nát vải. Phô mai thái nhỏ, nghiền nhuyễn, nhồi vào giữa quả vải. Lấy một ít bột mì bịt phần đầu quả vải. Lăn vải qua bát bột mì. Nhúng vải vào bát trứng đã đánh nhuyễn.

Cuối cùng lăn đều vải vào với bột chiên xù. Đặt chảo lên bếp, đun sôi dầu, thả vải vào chiên vàng đều là được, chú ý vặn lửa nhỏ.
